What Makes These Granola Bars High-Fiber?

School-Safe No-Bake Granola Bars

Ingredients:

  • 70 g medjool dates (about 4-5 large), pitted or 12 deglet noor dates
  • 1/3 cup honey
  • 1/3 cup sunflower or pumpkin seed butter
  • 3 tbsp coconut oil or butter (must use fat that is solid at room temperature so bars stick together!)
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 1/2 cups rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup pumpkin seeds
  • 1/2 cup Bloom Boost
  • 1/3 cup mini chocolate chips (or raisins/craisins!)

Directions:

  • Line an 8 or 9 inch square baking pan with parchment paper with overhang at the sides to easily remove bars from the pan. Set aside.
  • Pulse the dates in a food processor or blend with immersion blender until they form a chunky paste (if you don’t have a blender, very finely chop the dates.)
  • Over medium heat in a medium saucepan whisk the date paste, honey, seed butter, and coconut oil together. Once melted and warm, remove from heat. Stir in vanilla extract, cinnamon, and salt until combined. Set aside. (You can also use an immersion blender again here for an even smoother texture!)
  • Mix together oats, coconut, pumpkin seeds, Bloom Boost and chocolate chips in a separate bowl.
  • Add melted mixture to dry mixture and stir until well combined. Mixture will be sticky!
  • Pat down firmly into prepared pan. Place in freezer for ½ hour or fridge for 1 hour before cutting into 15 rectangles.
  • Store in freezer in freezer safe container for a school-safe, fiber filled snack!

Chewy Peanut Butter No-Bake Granola Bars

Ingredients

  • 12 pitted deglet noor dates (or 4-5 medjool dates) (about 70-75 grams)
  • ⅓ cup honey
  • 1/3 cup peanut butter (or almond butter)
  • 3 tablespoons coconut oil (or butter) (do not substitute or bars may not stick together!)
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 ½ cups old fashioned rolled oats
  • 1 cup unsweetened shredded coconut (plus extra for topping, if desired)
  • ½ cup silvered almonds
  • ½ cup Bloom Boost
  • ⅓ cup mini chocolate chips

Directions

  • Line an 8 or 9 inch square baking pan with parchment paper with overhang at the sides to easily remove bars from the pan. Set aside.
  • Pulse the dates in a food processor or blend with immersion blender until they form a chunky paste (if you don’t have a blender, very finely chop the dates.)
