The Best Baked Oatmeal for Meal Prep (with variations!)
Ingredients
- 2¾ cups rolled oats
- ¼ cup Bloom Boost
- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 2 tsps cinnamon
- ¼ tsp ground nutmeg
- 2 eggs
- ¼ cup plain Greek yogurt (can also use sour cream)
- ¼ cup unsweetened applesauce*
- 1/2 cup + 2 tbs milk
- 2 tbsp melted butter
- 3 tbsp honey (or maple syrup)
- 2 tbsp packed brown sugar
- 2 tsps vanilla extract
- 1 cup blueberries or mixed berries (fresh or frozen)
*No applesauce? Substitute ½ cup mashed ripe banana. The baked oatmeal will be slightly sweeter and have a mild banana flavour.
How to Make Baked Oatmeal for Meal Prep:
- Preheat oven to 350°F (175°C). Grease or line an 8 × 8-inch baking dish with parchment paper. (Can also use a 9x9 inch baking pan, but decrease baking time as per below)
- In a large bowl, whisk together the eggs, Greek yogurt, applesauce, milk, melted butter, honey, brown sugar, and vanilla until smooth.
- Add the oats, Bloom Boost, baking powder, baking soda, salt, and cinnamon. Stir until combined.
- Fold in ¾ cup of the blueberries, then sprinkle the remaining ¼ cup over the top.
- Transfer to the prepared baking dish and spread into an even layer.
- Bake for 35-38 minutes, or until the centre is set and the top is lightly golden. (*note: if using a 9x9 pan, the squares will be thinner and will need less time in the oven. Start checking at 28 minutes)
- Let cool for 10–15 minutes before slicing into squares.

Replace the blueberries with:

Replace the blueberries with:

How to Store and Freeze Baked Oatmeal
Store leftovers in an airtight container in the refrigerator for up to 5 days.
To reheat, microwave individual squares for 20–30 seconds. You can also freeze slices for up to 3 months and thaw overnight in the refrigerator (or simply remove from freezer and defrost in microwave).

- We recommend using rolled oats for the best texture. Quick oats will produce a softer, less chewy baked oatmeal.
- Fresh or frozen blueberries both work well. If using frozen, there's no need to thaw them first.
- This recipe is intentionally lightly sweetened. If you enjoy sweeter baked oatmeal, simply add an extra tablespoon or two of honey or brown sugar to the batter, or serve each slice with a drizzle of honey or maple syrup.
