Soft-Baked Banana Oat Bars

Prep Time: 10 minutes
Cook Time: 22–28 minutes
Pan Size: 8×8 or 9×9
Makes: 12–16 soft, tender bars

Wet Ingredients

  • 3 medium ripe bananas, mashed (about 1 to 1¼ cups)
  • ¼ cup neutral oil (olive oil works!) or butter
  • ⅓ cup maple syrup
  • 1 egg
  • 2 tsp vanilla

Dry Ingredients

  • 1 cup rolled oats (not quick oats)
  • ½ cup Bloom Boost
  • ¾ cup flour (whole-wheat pastry or all-purpose — both work)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 1/2 tsp cinnamon
  • ½ tsp salt

Optional Add-Ins

  • ½ cup chocolate chips
  • ½ cup chopped pecans or walnuts
  • Extra oats for sprinkling

Instructions

  1. Preheat your oven to 350°F. Line an 8×8 or 9×9 pan with parchment for easy removal.
  2. Mix the wet ingredients. In a large bowl whisk together the mashed bananas, melted oil/butter, maple syrup, egg, and vanilla.
  3. Mix the dry ingredients. In another bowl, combine the oats, Bloom Boost, flour, baking powder, baking soda, cinnamon, and salt.
  4. Combine wet and dry. Stir the dry ingredients into the wet ingredients.
  5. Let the batter rest for 5 minutes. This step matters — it allows the oats and Bloom Boost to hydrate, giving the bars their soft-baked texture without becoming gummy.
  6. Fold in chocolate chips or nuts if using.
  7. Spread into pan and smooth the top.
  8. Bake for 21–28 minutes, depending on your pan size. The edges should be set and the center should spring back lightly when pressed. DO NOT OVERBAKE!
  9. Cool completely before slicing. High-fiber bakes need time to set so the bars stay soft, not crumbly.

Texture Notes

These bars are:

  • soft
  • tender
  • cakey (but hearty)
  • perfectly moist
  • not overly sweet
  • not dense or heavy, despite the extra fiber

They truly feel like banana cake meets an oatmeal bar — the best of both worlds.

Storage

These keep well:

  • 3–4 days at room temp
  • 5–6 days in the fridge
  • Up to 3 months in the freezer (wrap individually for best results)

They thaw beautifully and make an excellent lunch-box snack.

How to Serve

  • With cream cheese frosting (so good)
  • Warm with a drizzle of almond butter
  • With Greek yogurt + berries for breakfast
  • Packed plain into lunch boxes
  • Cut into mini squares for toddlers
  • With a scoop of vanilla yogurt for dessert

Can I Make These Gluten-Free?

Yes — just use:

  • certified GF rolled oats
  • a 1:1 gluten-free flour blend

The bars will remain soft and cake-like.

Boosting Fiber Without Changing Taste

Bloom Boost blends seamlessly into this batter, adding:

  • soluble + insoluble fiber
  • omega-3 fats
  • plant-based protein
  • gentle digestion support

This is a great recipe for families who want more fiber without adding bran taste or gritty textures.
